Fajita Night







This week of menu planning is easier in one respect since it is a short week & Nick is gone next week. The challenge was that I haven't gone grocery shopping since before Christmas & I am trying to use what we have at home. Last night was fajita night with leftover steak. Nick sauteed onions & a yellow pepper before adding the cut-up steak. After I packed Ella's lunch, we only had 3 grape tomatoes left in the house. I added a can of Ro-tel tomatoes, & dinner had a little kick tonight! I was so happy there was one more apricot beer from Christmas.

We ordered the panini press earlier this month with Nick's incentive points at work. We use it at least once a week - especially for pancakes on the weekend. I think the press is a lot like breadmakers of a few years ago - some people use them all the time & others just let them collect dust. I think ours is going to get plenty of use.

I've been trying to get together with friends to swap recipes for easy-week night meals. So far, I've only received 1 recipe! But, I have hope that I'll start receiving more. Dinner for Thursday will be spaghetti & meatballs. Friday will be Chinese chicken. 1 week down, 51 to go. If I had only made 1 resolution, I'd be doing great!
