I've been 90% carb free, fruit free and dairy free since August. So, cooking hasn't been that exciting. I'm hoping to make it to Christmas before transitioning to a bit more sustainable diet. Until then, I'm getting excited for a good vegetable recipe. We've made this a few times and the veggies are even better on day two. In fact, I think the veggies need to marinate as long as possible before grilling. Make sure you combine the marinade in a separate bowl - mine were a bit too oily when I forgot to do that.
